During a Florida race week in February of 2012, while pit crewing for a sprint car team, the food truck concept was born. It was as simple as Mike cracking open a bag of handmade Canadian beef jerky with the crew....
Lucas was the first one in, and stated “this is the best damn jerky I have ever had”. Alright, maybe damn wasn’t the exact word, but you get the point? Lucas said “I’d love to open a food truck”, with Mike saying “as long as it's barbeque I’m in”.
If only it were that easy. Mike then had to convince his wife, which required numbers and a business plan, not just an “I’m in”. Since we had previously run a successful business, we needed to make sure this was as savoury as the previous venture. After much discussion, consultation, and the buy in from the bank, it was time to start the build.
The truck was purchased late May 2012 and required countless hours of designing, redesigning, building, rebuilding and fabricating. The process of naming the truck was also involved, as we wanted to capture the feel and essence of what we were selling. We are proud to say all major equipment and components were sourced in Hamilton - from restaurant equipment, auto parts, and sheet metal to web design.
Our truck was launched July 9th, 2012 and our company has evolved from there.
We utilize local suppliers as much as possible, and exclusively use Pane Del Sole Bakery for our buns. We are happy to promote and endorse our wonderful city in any way we can. See you on the streets y'all. The Southern Smoke Crew!
